A comforting drink for a cold winter's day made with atole (toasted blue corn), apple and spice.

Ingredients
  • 1 cup water
  • 1 cup almond milk, soy milk, or regular milk
  • 1 apple, cored and diced
  • 1/4 cup atole (blue corn flour)*
  • 1 star anise
  • Generous dash of cardamom
  • 1/2 tsp. vanilla extract
  • Maple syrup to taste
Instructions
  1. To a sauce pan, add the water, almond milk, and diced apple.
  2. Using an immersion blender, blend until smooth.
  3. Whisk in the atole and add the star anise. Heat over a medium heat, whisking frequently.
  4. Once the liquid starts to simmer, add the cardamom, vanilla, and maple syrup. (Add 1 tsp. at a time until you have the sweetness you desire.)
  5. Heat to a boil. Reduce and simmer, whisking or stirring for 3 minutes.
  6. Remove from heat, remove the star anise, and let rest for 2 minutes.
  7. If the corn flour lumps, blend again with the immersion blender.
  8. Whisk and pour into mugs, but be careful, it will be hot!
