Catfish fillets fried with a light, crispy cornmeal coating - just like my mama used to do it. For a dipping sauce, you could use a traditional tartar sauce or the version provided below.
Place cornmeal in another shallow bowl or pie pan. Add a generous amount of pepper. Stir to combine.
Place gently in hot oil. Cook until lightly brown on both sides and cooked through, about 2 minutes per side. If the oil covers the whole fillet, you shouldn’t have to turn it. Just cook it in the oil for about 4 minutes.
