To a bowl, add the eggs, milk, salt and pepper. Beat with a fork until the yolks and whites are just combined. Don’t worry about incorporating all of the egg white and don’t overbeat.
Move to a plate and top with the desired amount of green chile.*
Roasted, chopped green chile - The green chile can be heated in the microwave for about 30 seconds and placed on top of the finished eggs OR it can be whisked into the eggs and cooked.
For a vegetarian Christmas breakfast, replace the chorizo with black beans, pintos or bolitas smothered in red chile sauce.
