Scarlet runners are a large, meaty beans with the texture of a baked potato and a nutty flavor. With their rich broth they make a delicious vegetarian meal. They can also be used in salads, soups and stews, chilis, or blended with garlic and oil for hummus.
These pancakes are made with blue cornmeal (atole), toasted pecans, blueberries, buttermilk and a touch of coconut oil creating a slightly sweet and nutty flavor. For the cornmeal, I use atole which is a toasted blue cornmeal found at markets in New Mexico
A spicy mayonnaise made with roasted New Mexico green chile and lime. Use an immersion blender and have a jar of mayo in just 1 minute.
