Easy, healthy recipes with a southwestern flare
These Beef and Chorizo Enchiladas are the style of enchiladas served in many small town New Mexican restaurants. No cheese, sour cream or guacamole garnishes, just a simple filling wrapped in warm, soft, corn tortillas and smothered in red or green chile sauce.
Abiquiu, New Mexico, is a little village with less than 3,000 people positioned in one of the most enchanting areas of New Mexico. The area surrounding Abiquiu is what draws me back each year. It’s vistas, the Chama River Valley and red rock area provide some of the most beautiful scenery anywhere.
This chocolate pudding has a serious kick to it! It’s an easy chocolate pudding spiced with ginger, cinnamon, and Chimayo Red Chile powder (my favorite red chile powder).
