Starting with the first week in October, Albuquerque hosts one of the most beautiful events on earth – the Albuquerque International Balloon Fiesta. It lasts 9 days, but the memories last a lifetime.

Pie Town, New Mexico, is a tiny town in the middle of nowhere New Mexico. Pie Town is on Hwy 60, west of Socorro, NM and north of the Gila National Forest. It’s one of those towns that if you end up there, then that’s because you were headed there. And why would one go there? For the PIE!!! It has two restaurants that make every type of pie imaginable and they are all so good.
Grilled Portabello Tacos are made with slices of marinated and grilled portabello mushrooms, sauteed summer squash, and topped with a red chile-yogurt sauce, feta and lime juice.
These Beef and Chorizo Enchiladas are the style of enchiladas served in many small town New Mexican restaurants. No cheese, sour cream or guacamole garnishes, just a simple filling wrapped in warm, soft, corn tortillas and smothered in red or green chile sauce.
Abiquiu, New Mexico, is a little village with less than 3,000 people positioned in one of the most enchanting areas of New Mexico. The area surrounding Abiquiu is what draws me back each year. It’s vistas, the Chama River Valley and red rock area provide some of the most beautiful scenery anywhere.
The Twilight Light Parade it a traditional holiday parade that runs through the Nob Hill area of Albuquerque, a short section of the old Route 66. Visitors can enjoy the parade as well as the restaurants and shops along the route.
This chocolate pudding has a serious kick to it! It’s an easy chocolate pudding spiced with ginger, cinnamon, and Chimayo Red Chile powder (my favorite red chile powder).
