Roasted Chile Cheese is a twist on the traditional pimento cheese.  However, instead of roasted pimento peppers, roasted chile cheese is a mix of roasted New Mexico red and/or green chile, three cheeses, green olives, and a bit of this and a bit of that.  It has no mayonnaise or salad dressing as a pimento cheese might have making it a pure celebration of the marriage of roasted chile and cheese.  It’s sweet.  It’s spicy.  And it’s darn good!!!

These Coconut Crusted Tofu and Pineapple Bites were inspired by two completely different sources – Soni’s Food’s Coconut Crusted Tofu with Spicy Mango and Cucumber Topping and this very cool Hot and Cold Soapstone Serving Platter from uncommongoods.  Wanting to incorporate more tofu into our diet, I got really excited when I saw Soni’s recipe and just had to give it a try. Unfortunately, the mango I had was not very good, so instead, I zoned in on the fresh pineapple sitting on the counter and started thinking about how I could use it instead.  Literally, a few minutes later this complimentary serving platter was delivered to my door and everything just fell into place.

Masala Chex Mix by Ramona


Due to a kitchen remodel I’ll be without a kitchen for a few weeks, so I’ve asked some friends to keep my virtual kitchen going with some of their fabulous recipes. This week Ramona from Kitchen Simmer (aka Curry and Comfort) dropped by and brought me a batch of nostalgia; however, as Ramona always does, she added her signature seasonings and made it extra special.

If you don’t know Ramona, then you need to change that! 🙂  I’ve been following her blog for quite a while and have made several of her dishes – all of which were wonderful!  One of the best things I love about Ramona, is that she is fun!  You can read it in her writing and see it in her food – she’s having fun and just loves spoiling us all with her wonderful recipes!
