Olive Brine Pickled Vegetables

Making Olive Brine Pickled Vegetables is an extremely easy pickling process that allows you to repurpose olive brine after all of the olives have been eaten, as well as to deal with little pieces of fresh vegetables that haven’t been used.  All you need to do is to cut the  vegetables into small, bite size pieces, place in a jar and cover with olive brine.  Refrigerate for a couple of days and you have an awesome, healthy little snack.  If you want the vegetables to have a spicy kick, add a couple of sliced hot chile peppers.

As you can see, there is nothing to this process.  In the recipe, I’ve listed the vegetables shown in the pictures, and in the Kitchen Notes you’ll find other vegetables you could use.  And if you buy Costco size jars of olives like we do, you’ll always have olive brine.

Mango and Jicama Salad

I’m sure many of you can relate when I say that some of the best dishes come about when there’s “nothing in the fridge”. How many times have you heard those words spoken by someone in your household? Home cooks know that there is ALWAYS something in the fridge! That’s how this mango jicama salad come to be.

I have to admit that it was time to go to the co-op and restock, but I still had some “halves” of this and that in the crispers – a half of a red bell pepper, a piece of Jicama, some pickled cucumbers from the night before, and a mango that had been waiting a while to be chosen. I sliced it all up and tossed it together in a salad bowl with some fresh mint and a touch of onion. The dressing came from using some of the vinegar marinade from the cucumbers (nothing goes to waste) with a little oil and – voilá – a wonderful, refreshing summer salad.

Quick Pickled Cucumbers

While my mother canned some of the best sweet pickles I’ve ever had, she also made these little batches of quick pickled cucumbers as a condiment for the dinner table or as an afternoon snack.  It wasn’t a dish that I helped with (because it’s so easy!), so I never learned how she made them, but I certainly remember how they tasted.  I knew the marinade had vinegar and sugar, but what type of vinegar, what other ingredients and at what proportions – I had no idea.  So many years ago (pre-internet, if you can imagine such days ever existed), I started playing around, trying to get the marinade just right for that deja vu moment. After a few batches, I had it.  I’m not sure if it’s my mom’s quick pickled cucumber recipe, but it sure reminds me of hers.  Ever since then, I have been using these little “pickles” in salads, sandwiches, as a snack, and as a side for pot stickers and other dishes.
