Mama’s Southern Peach Cobbler and The San Pedro River Valley

My Mama’s Southern Peach Cobbler is the recipe that, during my lifetime, I’ve eaten more than any other recipe and probably have made it more than any other recipe.  This is a cobbler recipe that has been passed down through the generations in many southern families.  My grandmother passed it down to my mother and then she passed it down to all of her kids.  It’s easy, delicious, and just downright fun to make.  You can use just about any fruit or combination of fruit.  A side of ice cream or whipped cream is a nice finish, and in the case of peach cobbler, ice cream and whiskey sauce is the ultimate Mardi Gras dessert.  I hope you enjoy!

Before you head on down to the recipe, let me go ahead and tell you that this Mixed Berry “Pudding” has no dairy and no eggs and no bake time.  It’s simply fruit simmered for 2 minutes with a sweetener and a little bit of water, poured into a bread lined ramekin and weighted down overnight to allow the fruit, juice, and bread to all come together as one.  It’s best served cold with a bit of warm berries on top.  It’s amazing!

Do you remember my Salted Pecan Bark from a few weeks ago?  It was SO good, but even I can get too much of a good thing.  So to change things up a bit, I converted the bark recipe into an ice cream recipe.  Oh my!  Another big mistake!  Bobby kept telling me that I had to make one more batch before he was sure that the recipe was perfect. 🙂  As a result I’ve made four batches of this ice cream in the past 2 weeks!  He finished off the fourth batch last night and asked “More please?”.

Actually, I thought I would finish off my first year of blogging with something completely different and post a pie recipe! With this post I actually had to add a “dessert” section to my recipe index.  🙂

I’ve always been a fan of apple pie, but haven’t made many of them, but then I haven’t made many pies at all.  I’m actually more of a cobbler person. However, I couldn’t resist the high praise from the two young girls that promised me that this Caramel Apple Pie would be the best apple pie you’d ever eat!  It sounded like a dare to me.  So I took the challenge and do not regret it!

Rhubarb Mint Sorbet

This is a rhubarb recipe for those who love rhubarb as well as for those who don’t. And how do I know this to be true? Bobby isn’t a fan of rhubarb unless it’s combined with strawberries – until now.

I was so excited when I went to the local co-op last week and found fresh rhubarb. I wanted to go home and make a rhubarb-strawberry cobbler; however, summer has set in so the highs are in the 90’s. In this house – that means it’s too hot to run the oven. When you cool your house with a swamp cooler (very common in the southwest) it’s hard to keep the house cool if the oven is on. So – since I can’t use the oven, I had to come up with something else to do with the rhubarb.
