This Bourbon Braised Pork has a fabulous combination of ingredients – apples, mushrooms, aromatics, lots of sage, and a braising liquid of bourbon and apple cider.  It’s hearty, healthy, full of flavor, and, when served over toasted Israeli couscous or brown rice, a complete meal.  And on top of all of that, it takes less than 45 minutes to make.  It’s one of those meals that you’ll be asking – “How soon can I make it again?”.

October is National Apple Month and what a month it’s been for great apples! Wanting to give a new apple recipe a try, I decided on an apple clafoutis.  I chose the clafoutis because Bobby and I both love custard type dishes and fruit, and, it’s a dish I’ve never made.

This apple clafoutis is not a traditional French clafoutis which, from what I found, is made with cream and sugar.  It’s a bit lighter in that it’s made with 2% milk, a little brown sugar to coat the apples, and maple syrup in place of sugar for the egg mixture.

This year’s apple crop is in and it’s so nice to finally bite into a fresh crisp apple again.  Because it is the best time of the year to buy apples and there are so many ways to enjoy them, I put together a Collection of Sweet & Savory Apple Recipes for you.

All of the recipes from MJ’s Kitchen are tried and true dishes that we make at least once during the fall.  Several of them, like the steel cuts, crepes, snack and slaw, we make year round.  The recipes from other websites have all been tried and thoroughly enjoyed, with one exception – the chimichangas.  I keep drooling over them but haven’t made them yet.

When it’s cold outside, I need to be warm on the inside.  That’s why, during the winter months, cold cereal stays in the pantry and hot dishes like eggs, grits and steel cut oats become our main stay breakfasts.  This winter this Spiced Apple Breakfast has been added to our repertoire – stewed, spiced apples with granola and crème fraîche.  It is so easy to make and takes no time at all.  The hot spiced apples, with the crunchy granola and creamy crème fraîche yield an enjoyable breakfast that is so warm and satisfying.  And if you really want to spice things up, add some of those bourbon infused cranberries from that old-fashioned you made last night. 🙂

Apple Pecan Buttermilk Pancakes

For the past year, whenever I made pancakes I would make my Cornmeal Ricotta Pancakes or these Raspberry Oatmeal Yogurt Pancakes by my friend over at Inspired Edibles.  Both have been our favorite pancakes for quite a while, but now they have some serious competition – Apple Buttermilk Pancakes.

With this year’s plentiful and delicious fall apples, I’ve been making these Apple Buttermilk Pancakes with Pecans.  They are so moist, and can be sweet or a little tart depending on the type of apples used.  The pecans add a bit of a crunch, and if you toast them first, you get a little extra flavor that complements the apples quite well.  Top the pancakes with warm maple syrup for a delicious weekend brunch.

Now for something completely different…

In the late 80’s Bobby and I spent a week with some friends on a houseboat on Lake Powell, a lake on the Colorado River in the southwestern U.S. During this trip we were introduced to this wonderful, simple snack with apples, walnuts, raisins and a touch of cinnamon. Thank you Donna! I can’t even begin to tell you how many times I’ve made this snack over the years. I always had a bag of it in my backpack at the start of a backpacking trip.  We’ve taken it camping, on road trips, and on numerous hikes. Because it only takes 5 minutes to throw together, it’s perfect for your lunch bag or an afternoon snack. Aside for the fact that it is just downright delicious, this simple snack with apples also keeps for a couple of days with or without refrigeration, making it a snack that you can take just about anywhere and never get tired of eating.

Apple Pecan Crepes with Cheddar Cheese

If somewhere in the human genome there is a gene for a sweet tooth, then my family has it! We always had desserts and sweets to nibble on when I was growing up and we all still need that little bite of something sweet after each meal. One of my favorite sweet treats that my mama use to make, and one I still love today is taking a piece of apple pie, topping it with a big slice of cheddar cheese and putting it under the broiler until the cheese melted all over the pie. These Apple Pecan Crepes are a lighter version of the apple pie and just as delicious.

To make Apple Pecan Crepes with Cheddar Cheese you first make some light crepes with a bit of dark rum. Fold grated cheddar cheese into the crepes and heat.  Gently saute’ apples in butter, topped with cardamom, cinnamon, nutmeg, and a touch of maple syrup, then place them on top of the crepes.  Top with chopped toasted pecans and touch of warm maple syrup.  Now if that doesn’t get your mouthwatering, then nothing will!

Actually, I thought I would finish off my first year of blogging with something completely different and post a pie recipe! With this post I actually had to add a “dessert” section to my recipe index.  🙂

I’ve always been a fan of apple pie, but haven’t made many of them, but then I haven’t made many pies at all.  I’m actually more of a cobbler person. However, I couldn’t resist the high praise from the two young girls that promised me that this Caramel Apple Pie would be the best apple pie you’d ever eat!  It sounded like a dare to me.  So I took the challenge and do not regret it!
