When it came to learning how to make corn tortillas it was something that I had to do a few times in order to get an easy process with consistent results.  And now that my process and results are quite consistent, making tortillas is as easy as throwing together a salad. Plus, I love making them and eating them! Being able to take a warm tortilla right off the griddle and slather it with butter is a culinary delight, not to mention the tacos and enchiladas (listed below) that are even better with homemade tortillas.

After a brief week of warmer weather, winter returned and so did the desire for comfort food.  Upon the request of a visiting friend, I made this New Mexico pork and green chile posole.  This posole, like most posole dishes, is hearty, spicy and warms you through and through.  It’s made with pork shoulder and roasted green chile, and served with warm corn tortillas.  The only problem with this posole is making sure you have enough, because everyone is going to want seconds!

Home fries are a wonderful addition to so many meals and in some cases, can be the primary ingredient that you build a dish around.  For example, this Southwestern Pileup uses a skillet of home fries to support a mix of vegetables and proteins, and your choice of red or green chile.

Home fries make a complement side to huevos rancheros, migas or a meat entree’ like green chile cheeseburgers,  pulled pork or smoked brisket.  And if you aren’t a fan of white or yellow potatoes, then never hesitate to make sweet potato home fries. They make a great substitute for the hash browns in this sweet potato and green chile dish.

Easy Salad with Dino Kale, Cara Cara Orange, and Pepitas

We’ve been making massaged kale salads for several years now, using whatever fruit is in season – peaches, mango, apples, oranges. All are very tasty, but our favorite is this salad made with dino kale, Cara Cara orange, pepitas and a light dressing of olive oil, lemon juice and honey.  This salad is crunchy, tart, sweet, and citrusy, and it’s SO EASY to make…20 minutes or less.

It can be served with just about anything or alone as a meal.  We really like it with spicy foods, like red chile enchiladas, because the sweet citrus helps to dampen the burn.  It’s also a wonderful complement with grilled flank steak, smoked chicken or turkey, pork kabobs, and smoked beef tri-tip.  It’s also a nice salad to take to picnics and potlucks because the kale leaves hold up to the dressing for quite a while.

When you think of dessert, does “tamale” come to mind?  Well, if not, maybe I can change that with these chocolate tamales with port infused cherries.  Inside of these little corn husk packages are individually sized chocolate cakes, packed with dried cherries that have been re-hydrated in sweet Ruby Port.  The “cakes” or tamales are made with masa (corn flour), cocoa, and a few other choice ingredients.  Served these tamales warm with a small scoop of vanilla bean gelato and you’ll feel like a kid at a birthday party eating chocolate cake and ice cream.

Fried Green Tomato Tacos

Recently Bobby and I did a road trip through the coastal southern U.S. heading down to the Louisiana coast and ending up on St. George Island, Florida.  As always we ate only at local restaurants and as expected, Bobby always found the best of the best.  For lunch one day we stopped at a little place in Pascagoula, Mississippi, called Jack’s by the Tracks – “a Southern-Sushi-Juke-Joint-Fish-Taqueria-Neighborhood-Pub-Deli”. After pursuing the diverse menu, we both settled in on the tacos.  Bobby got the Shrimp Tacos and I went for the Veggie Taco with bacon. 🙂  The veggie tacos were fried green tomato tacos that were superb! Right then and there I knew I would have to give them a try at home.  And luckily…
