Whether you’re growing them or buying them, cucumbers are cheap and plentiful right now, and there are so many ways to incorporate them into your meals. Here are some of my favorite cucumber recipes from MJ’s Kitchen that feature the mighty cucumber.

Cold Cucumber Soup

One of the best cold soups of the summer! A cucumber, sweet onion soup with a broth base, and mixed of herbs. Bobby and I just can’t get enough of this soup. Goes great with a green chile grilled cheese.

Quick Pickled Cucumbers

An easy addition to the relish tray. Just takes 10 minutes of prep and 30 minutes to overnight to rest in the marinade. Served chilled for a nice little palate cleanser or add to salads and vegetable bowls.

Make your own cucumber vinegar with pepper and garlic

Pepper Cucumber Infused Vinegar

A great way to enjoy cucumbers year round. After 6 weeks rest, vinegar transforms into a peppery cucumber infusion. A nice finishing vinegar or base for homemade salad dressings.

Cucumber cocktail with or without vodka

With or without alcohol, this cucumber beverage is a refreshing summer drink, sweetened with a bit of agave nectar and flavored with fresh mint.

Mediterranean Feta Dip

This was one of the first recipes I ever posted because it’d been a favorite of ours for years. Feta, cucumber, fresh tomato, mint and Tabasco come together to wonderful little appetizer. An oldie but goody.

  2. I love cucumber! Actually I have it constantly in my fridge 365 days a year! Of course, it tastes so much better in the summer, but it’s one of those rare vegetables I love all year round (unlike tomatoes for example). I eat cucumber so often, pickle it too, and yet, as always, I find so many new inspirations from you!
    Thank you so much for the kind reminder of my humble rolls! I have actually completely forgotten I used to make them often at the time. They are so light and healthy… I must make them once more before the end of summer!

    • My cucumber didn’t make it this year. The seeds kept sprouting but then would be gone the next day. When I looked out my window on morning and saw 4 doves in the cucumber pot, I finally realized why they weren’t growing. So no cucumber this year in my garden, but lots from local farmers. I have a jar of vinegar resting right now. So many ways to use them and your rolls are fabulous! We’ve made them a few times for supper.
