New Mexicans Love Their Green Chile

In the fall of 2011 we shot a short video for a contest sponsored by Chile Monster, a supplier of New Mexico chile, tortillas and tamales. The goal of the video was to “represent ANYTHING about New Mexico Chile, your LOVE for chile, Eating Chile, ANYTHING CHILE!”  It sounded like fun, so we went for it!

Bobby came up with a great idea that required his brother Jeff, a person who loves eating hot food (the hotter the better), to eat a bowl of really hot NM green chile. The premise of the idea – let’s make Jeff sweat!!! For the video Bobby shot Jeff eating a bowl, actually two bowls, of fresh roasted New Mexico chile with a few beans and a little hamburger meat (recipe follows). The video should make you smile. So did we win the contest? YES, we WON! Guess what we won? Roasted Green Chile! Do you think I could come up with something to do with that? 🙂 The chile prize was actually lagniappe. It was the making of the video and having fun with my family that was the real prize!

So what IS he eating? He’s eating a very simple Green Chile Stew. It’s not our regular Green Chile Stew, but it is still quite tasty and very easy to make. For the video I held back on all of the non-chile ingredients, because I wanted the chile to be the star of the show – although I think Jeff stole the show! The initial green chile stew (what Jeff ate) was WAY TOO HOT for me, so when we had the leftovers for supper the next night I added more meat and beans. The following recipe is how I make it for “normal” people.

A quick and easy green chile stew made with ground beef, New Mexico green chile, and beans.  Great for when you’re in a hurry and craving for a bowl of green chile stew and even better the next day.

Ingredients
  • 1 tsp. coriander seeds
  • 1 Tbsp. vegetable or olive oil
  • 1 pound lean ground beef (optional for vegetarians*)
  • ½ medium onion, minced
  • 3 large garlic cloves, minced
  • 4 to 6 cups homemade chicken or vegetable stock (varies with amount of chile used)
  • 1 to 3 cups roasted, peeled, chopped green chile*
  • 2 cups cooked pinto beans*
  • ¼ to ½ tsp. salt, to taste
  • 6 Flour or corn tortillas
Toppings
  • grated cheese Cheddar or Montery Jack
  • minced onion
Instructions
  1. Heat a Dutch oven over medium-low heat. Add the coriander seeds and toast, shaking often, for about 2 to 3 minutes, until aromatic and lightly toasted. Transfer seeds to a spice grinder or mortar and grind.

  2. Add the oil, beef, onion and garlic to the hot pot. Cook for 4 minutes, stirring frequently.
  3. Add 4 cups of stock, the green chile, and ½ tsp. ground coriander. Cook for 15 minutes. (Add more liquid if needed)

  4. Add the pinto beans. Cook for 10 minutes. Taste and add salt, if needed.

  5. Serve.  Top each bowl with grated cheese and minced onion.

  6. Serve with warmed flour tortillas, corn tortillas or cornbread.

Kitchen Notes

Make ahead of time – As with most stews and soups, it’s best to make the day before.  This stew is no exception.  The flavor and heat from the chile intensifies and all the flavors just come together for a delicious bowl of goodness. 

 

Roasted Green chile – The range for the amount of chile is based on the heat index of the chile and how hot you want your stew.  With medium chile, you could probably add at least 2 cups, if not 3.  With medium to hot chile, add 1 cup, then taste and add more if needed. 

 

Pinto Beans – Cook from dried beans ahead of time or used canned beans.  No need to drain the beans.  The bean broth just adds more flavor to the stew.

 

Vegetarian version – Omit the meat, use water or vegetable broth, and add a large diced potato and a can of diced tomatoes.  You could also add more green chile if desired.

 

Servings – This recipe provides at least two meals for two people. Sometimes there might be 1 serving leftover for a lunch.

 

 

 

Another green chile stew that we make is Green Chile Stew with Sirloin which is one of Bobby’s favorite things to cook and is quite different from this quick & easy recipe. It’s a lot heartier and more like a real stew with chunks of beef and potatoes. We love both of these stews and which one we decide to make is really just determined by the ingredients on hand and how much time we have.

    • Alea, this chile stew is more about the chile than the meat and here in NM, tortillas are the standard carb for chile dishes! Now Texas type chili I would definitely eat cornbread! Thanks for dropping by!

  18. Wow Jeff ate it all… my stomach can’t tolerate spicy food. It’s shame – I love to try and enjoy all kinds of spicy food but I’ll be gone for hours after that and it’s just not worth it. My husband loves spicy food and eat while he sweats. I kind of dream of eating spicy food to experience that heat. I was watching this video and felt envy that Jeff eats this chile so good! Looks yummy and wish that my stomach cooperate with me!

  32. I have had bowls of green chile all over NM. But, that was the best bowl of green chile ever. Nice and hot but the flavor of the chile really came through.
