Red and Green Chile (aka Christmas)

Christmas Breakfast: Scrambled eggs with green chile, Chorizo with red chile. @MJsKitchen

As mentioned in my previous post – Red or Green?, when you want both red and green chile on your order all you have to say is “Christmas”. Unless you specify, you’ll get green chile on half of your order and red chile on the other half and the placement is arbitrary. I like to be specific. My favorite way to have Christmas is to put red chile on one item and green chile on another and that’s how I prepare my Christmas breakfast.

My Christmas breakfast consists of scrambled eggs topped with chopped green chile, Mexican chorizo and onion with red chile sauce, and a flour tortilla. Sometimes I’ll add a side of black beans topped with, of course, red chile. It’s a simple breakfast, hardy and packed full of protein. Great for any day of the week, any time of the year.

Course: Breakfast
Cuisine: New Mexico
Keyword: eggs, green chile
Yields: 2 servings
Recipe Author: MJ of MJ’s Kitchen
Ingredients
  • 4 whole eggs and 1 egg yolk
  • 1 Tbsp. milk
  • 1/8 tsp. each salt and pepper
  • ½ Tbsp. butter
  • ½ cup chopped green chile*
  • Warm corn or flour tortillas
Instructions
  1. To a bowl, add the eggs, milk, salt and pepper. Beat with a fork until the yolks and whites are just combined. Don’t worry about incorporating all of the egg white and don’t overbeat.

  2. Melt the butter in an 10 inch nonstick skillet. Add the eggs and gently move a rubber spatula through the eggs, scraping the bottom and the side of the pan. Continue to move the spatula through the eggs until large clumps start to form. At this point use the spatula to fold the eggs until done. Done is when the eggs are still shiny, but not runny.
  3. Move to a plate and top with the desired amount of green chile.*

  4. Heat the flour or corn tortillas on a cast iron griddle until warm and serve with the sausage and eggs.
Kitchen Notes

Roasted, chopped green chile – The green chile can be heated in the microwave for about 30 seconds and placed on top of the finished eggs OR it can be whisked into the eggs and cooked.

For a vegetarian Christmas breakfast, replace the chorizo with black beans, pintos or bolitas smothered in red chile sauce.

I have to admit that until recently, I couldn’t make a decent batch of scrambled eggs to save me. Fried eggs – no problem. Scrambled eggs – not very good. After reading the method for cooking scrambled eggs in Cook’s Illustrated, I realized what I was doing wrong – everything:

I overbeat the eggs.
I added way too much milk.
I added way too much “stuff” (onions, celery, peppers, etc.)

My old method produced a watery dish of sauteed vegetables with some egg in there somewhere. Many thanks to Cook’s Illustrated for teaching me how to make the perfect scrambled egg.

  14. I could eat chorizo every day and not get tired of it. Something about the flavor calls to me! This looks delicious. I am always trying to put eggs with everything for breakfast! This is perfect!

  15. For over twenty years our traditional Christmas Dinner is both Red and Green Chile. I can’t imagine having anything else that day.

  16. Hello, nice entry! I will keep surfing your blog 😉

  17. Oh man, this is my my kind of breakfast! I frequently have scrambled eggs with salsa and a tortilla. Now I need to find some good chorizo in St. Louis, so I can try this out. Looks fabulous!

  18. Easy and tasty. Looks wonderful.

  19. Delicious! I do love chorizo with eggs. Such a hearty and comforting breakfast. Glad you figured out how to make the perfect scramble eggs. Cook’s Illustrated is a great resource. Looks terrific even if it isn’t Christmas!

  20. Okay, I like Christmas breakfast too but your dish that looks this good. . . I would have it Christmas or no Christmas. 😉

  21. I recently took a trip to New Mexico and I was surprised at how many times the question, “red or green?” was asked during our stay there. After coming back home, my friend told me about “Christmas”. I wish I had known that before our trip! Anyway your breakfast looks very tasty!!

  22. I have to say that this really my favorite way to eat eggs – chorizo and peppers. YUM!

  23. Yumm this sounds really good especially the vegetarian version with black beans smothered in red chile sauce!!

  24. That looks delicious! I used to make decent enough scrambled eggs, but nothing to write home about….then I saw Julia Child’s show on eggs and it – literally – changed me! I make the BEST eggs now!

It’s amazing how the basics can be easily over-looked, isn’t it? I like the idea of Christmas eggs!

  25. I would love to order a bushel of roasted green chile. And how much would it cost to have sent.

  26. I was a little bit thrown off by the title, but now I can see that Christmas breakfasts can (and should) be enjoyed year-round.

  27. This is a great and healthy breakfast. I think tortilla, eggs and chorizo go really well together.

  28. Thanks all for your comments and for stopping by!!! 🙂 We do love this breakfast. When I only have one color of chile, we’ll wrap everything up in the tortilla and smoother it in chile. SO good! A little different breakfast than what Giulia is eating in Italy! 🙂

  29. This looks like a hearty breakfast! Great recipe and lot’s of yummy ingredients!

  30. I’m a breakfast person and I do eat breakfast like lunch (and I eat lunch amount for lunch too! =P) and this seems like a perfect breakfast meal to start a day!

  31. I loved both the recipes, but if you allow me to choose one, I’ll choose the chorizo!! Great post and yummy flavours! The picture looks awesome!!

  32. This dish looks amazing, and I like the concept of Christmas toppings…
I’m having some trouble in looking at this and thinking about breakfast, though… in Italy breakfast is usually sweet… coffee, cappuccino, croissant, bread and jam, cake or something like this.
But sometimes I’ll have to try a savory breakfast… and this looks the queen of savory breakfast!

  33. You must officially be the first to talk about Christmas. Lol. Great theme on the red and green!

  34. Oh my!!!!! Now, that is BREAKFAST! I love it and would love to try some of that… I like this Christmas concept: a great way to get the best of both worlds! 😉
